CANDLEMAS
Pancake time.
The chef gives you his recipe.
Don't forget, Candlemas is on its way.
Winter will either end or hold its sway.
Hide a gold coin in your hand
to keep bad luck from the land.
So riches all year long
Will be your song.
Pancakes flambéed in Grand Marnier
Ingredients (serves 6):
- 250g flour
- 3 eggs
- 3 spoons of sugar
- 2 spoons of neutral oil
- 500ml milk
- 1 pinch of salt
- 4 spoons of Grand Marnier
To sprinkle over the pancakes :
- 6 sugar cubes
- a little water
- a knob of butter
- 2 large glasses of Grand Marnier
- zest of one orange
In a bowl, mix the flour, sugar and salt. Add the eggs and then the oil. Dilute by gradually adding the cold milk. Leave the mixture to rest for an hour in a cool place. Just before you cook the pancakes, add the Grand Marnier.
Lightly oil a pancake pan. The thinner the layer of mix, the thinner and lighter the pancake. Fold the pancakes in four on a stainless steel platter.
In a saucepan, heat the sugar, water, orange zest, butter and Grand Marnier. Sprinkle the pancakes with the contents of the saucepan and set light to it.
Enjoy!
